RISO INTEGRALE AL FORNO CON TOFU

Ingredienti
Per 4 persone: 4 cucchiai e mezzo di olio - 1 cucchaio e 1/2 di margarina vegetale - 1 cipolla grande, affettata finemente - 1 tazza di riso integrale lessato - 330 gr. circa di tofu pressato - 1 cucchiaino di sale - 1 pizzico di pepe - 1 tazza di latte di soia - 1 tazza circa di pane grattuggiato - 50 gr. circa di lievito alimentare in scaglie
Preparazione
Riscaldate il forno a 180 gradi. Scaldate una padella o un wok con 2 cucchiai di olio e la margarina, aggiungete la cipolla e fate rosolare bene. Unite il riso integrale e poi il tofu, e lasciate insaporire per 2 minuti ciascuno, aggiustando di sale e pepe. Versate la mistura in una pirofila o in una teglia unta con l’olio rimasto. Versatevi sopra il latte, poi cospargete con il pangrattato e il lievito alimentare. Cuocete in forno per 15-20 minuti.

Ingredienti

2 tazze di riso integrale
un cavolfiore
uno spicchio d’aglio
un pezzetto di ginger fresco
olio di semi
shoyu
curry
sale

Preparazione

Lavate bene il riso integrale, mettetelo in una pentola con il doppio dell’acqua (si calcola una tazza di riso per due tazze d’acqua) fredda, salate poco e lasciate cuocere per circa quaranta minuti. Tritate il ginger e l’aglio e soffriggeteli in una padella nella quale avrete versato un poco d’olio, aggiungete il cavolfiore ridotto in pezzi piccoli e quando quest’ultimo sarà diventato morbido spegnete e salate. In una teglia da forno leggermente unta, sistemate il riso già cotto, unite il cavolfiore, un cucchiaino di shoyu e un cucchiaino di curry in polvere. Mescolate bene il tutto, livellate e passate al forno, fino a quando non si sarà formata una crosticina sulla superficie, il riso è pronto. Per questo tipo di cottura a noi piace di più il riso a grana tonda perché rimane più compatto, ma si possono usare anche altre qualità.
